Korean doljaban muchim

Last update - Monday, July 1, 2013, 14:51 By Meredith Hicks

Doljaban muchim is a Korean seasoned seaweed dish that can be eaten as a side dish or a quick main meal.  With only a few ingredients, it makes for a fast and delicious treat to eat!

Ingredients:

100g doljaban or wakame seaweed

2 garlic cloves, crushed or minced

3 spring onions, finely chopped

3 tbsp soya sauce

4 tsp sesame oil

1 tsp sugar

240ml water

2 tsp toasted sesame seeds

Take the seaweed out of the package and place into a large bowl. If you happened to purchase seaweed formed into small long strips, then cut them in half, or into small pieces. Pour the water over the seaweed and let it soak for 4-5 minutes before removing and pressing out any excess water.

In a separate bowl, combine the sugar, soy sauce, garlic, sesame oil and spring onion, and stir until the sugar has dissolved. Depending on one’s taste, add more sugar.

Pour the sauce over the seaweed and stir until the seaweed has absorbed the liquid.  Sprinkle on the toasted sesame seeds and mix again before serving, or keep in the fridge for up to five days.

Tip: If the seaweed looks like nori (the kind you’ll find in sushi rolls) then you have the wrong kind of seaweed! Doljaban or wakame should be pretty easy to find in any Asian food shop.
