Here’s another way to eat your carrots: turn them into a raw salad! Instead of worrying about overcooking them, or how to use up your leftover carrots in some kind of meal, here is a simple side dish or snack that only has four steps and four ingredients!
Ingredients:
4-5 carrots
1 lemon
Pinch of salt to taste
1 tbsp rapeseed oil (or vegetable oil)
Rinse and peel the carrots. Here’s a tip for that: you can use a clean, unused steel scrubber for this to quickly scrub the rough surface off!
Next, coarsely grate the carrots into a bowl. Squeeze the juice from one lemon and add to the grated carrot, then pour over the oil and add a bit of salt to taste.
Toss the grated carrot mixture until evenly coated. Before serving, add a bit of fresh parsley as a garnish, or coriander leaves for extra flavour. Serve and enjoy immediately!
