Here’s a quick and easy fried rice dish from China’s Guangdong region. Although the recipe includes anchovies, you can remove them to make it vegetarian; just make sure to season with enough salt to maintain the rich flavour.
Ingredients:
25g small anchovies, salted and dried
300g steamed rice
3 spring onions
1 egg, beaten
120g black beans (about half a tin)
Small bunch of coriander, chopped
6 tbsp cooking oil
2 tbsp sesame oil
2 tbsp soya sauce
1 tbsp Kecap Manis (or soya sauce with a little brown sugar)
Pour the cooking oil into a pan and put on to medium heat. When hot enough, fry the anchovies in the pan for 3 minutes, or until the fish is golden brown. Remove the anchovies and place on a plate with a paper towel to absorb the excess oil.
Slice the spring onion and add into the same pan, cooking for one minute, then leave aside in a bowl. Then add the beaten egg to the pan, scramble it and add to the bowl with the spring onion.
Pour the black beans into the pan and fry for one minute, then add the rice. Next add all of the ingredients from the bowl into the pan and fry until well coated.
Pour the remaining oil, soy sauce, and sweet soy sauce in the pan and fry until brown. Dish out the cooked rice mixture into a larger bowl, and stir in the chopped coriander before serving. Enjoy!
