Vangi Bath

 This week’s recipe is vangi bath, a rice dish made with aubergine. It is one of the speciality dishes of Karnataka state in India. I hope you will like it! 

Ingredients

- 1 aubergine, cut into pieces
- 1 cup cooked rice
- Salt to taste
- 1 tsp lemon juice
- 1–2 green chillies
- 1/4 tsp turmeric powder
- 1 tsp masala powder
- Fresh coriander leaves to garnish

For the seasoning:
- 1 tsp Bengal gram
- 1/2 tsp urid dal
- 1/2 tsp mustard seeds
- A few curry leaves
- 1 tbsp oil

Method

Heat the oil in a saucepan, then add all the seasoning items. When they splutter, add the aubergine pieces and let them cook till they’re done.

Next add the turmeric powder, salt, lemon juice and 1 tsp masala powder.

Mix with rice and serve hot.

Note: To make your own masala powder, you need 1 tbsp coriander seeds, 1 tsp cumin seeds, three cloves, a 1-inch cinnamon stick and 1 tsp desiccated coconut. Fry all but the coconut in a little oil for 5 minutes, the turn off the heat and add the coconut. When it cools down, grind in a coffee grinder into a fine powder.
