Turkish bulgur salad

  Bulgur salad is a traditional Turkish food, and also goes by the name ‘kısır’. Fine bulgur wheat is used to make the salad, along with tomato puree and fresh tomatoes, parsley, olive oil and other ingredients that you can find at any good Asian market. Enjoy with a cup of tea.    

Ingredients:

400g fine bulgur wheat

2 tsp salt

1 tbsp tomato puree

1 tsp red pepper paste

400ml boiled water

2 green bell peppers

2 red bell peppers

5-6 spring onions

Parsley, half a bunch

2 tomatoes

Juice of 2 lemons

50ml olive oil

Pomegranate molasses to taste

 

Place the bulgur wheat in a bowl and add the salt. In a separate jug or glass, dissolve the tomato paste and pepper paste in the boiling water and add this mixture to the bulgur. Cover and let it rest for 20-30 minutes.

Next, chop the red and green peppers into small cubes, then sauté them in a pan until soft.

Chop the spring onions, parsley and tomatoes into small, thin pieces, then add to the bulgur with the fried peppers, lemon juice, pomegranate molasses and olive oil and mix it all together. Enjoy your meal!.
