This classic Italian desert is very easy to make, and requires no cooking at all!
Ingredients:
Serves eight
6 fresh eggs
12 tsp sugar
500g Mascarpone cheese
400g sponge fingers
Cup of strong coffee
Cocoa powder for dusting
Brew a cup of strong coffee, then pour it in a shallow dish and allow to cool. Meanwhile, break the eggs and separate the yolks from the whites. In a bowl, whisk the yolks with the sugar together, gradually adding the mascarpone cheese until it reaches the consistency of a thickly whipped cream.
In another bowl, beat the eggs whites until stiff (hint: a little bit of salt might help), than gently fold them into the mascarpone mixture.
Next, dip the sponge fingers in the coffee – they should be nicely soaked on both sides, but not soggy – and arrange them in a flat dish forming a layer across the bottom.
Cover the sponge fingers with half of your mixture, then arrange a second layer of sponge fingers on top, covering these with the remaining mixture.
Dust with the cocoa powder on the top and put it in the fridge to set for a while. It will be ready to eat whenever you want!
