This week’s recipe is stuffed okra. Okra is one of my family’s favourite vegetables, and the following is the simplest version of one of my okra recipes. Hope you like it as well!
Ingredients
- 10-15 okra pods
- Oil for deep frying
For the stuffing:
- 1 tbsp coconut (fresh or desiccated)
- 1 tsp urid dal
- 1-2 red chillies
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- A few curry leaves
- 2 tsp fresh coriander
- Small piece of tamarind
- 1 tsp oil
Method
Slit the okra pods and deep fry them in oil, then keep them aside.
Next, heat 1 tsp of oil in a saucepan, and add the urid dal and red chillies till the dal turns a little brown. Then add the cumin and coriander seeds, then the curry leaves and coriander.
Fry for 5 minutes, before finally adding the coconut and frying for a few more minutes.
When it cools down, add the tamarind and stir the mixture into a fine paste, adding enough water.
When ready, stuff the split okra pods with the mixture and serve as a side dish with any meal.
