Spring is a perfect time for salads, especially since so many delicious vegetables are in season. This colourful and crunchy salad is simply delicious with a bit of exotic sweet and sour dressing.
You can experiment with the dressing according to your taste. If you want it spicy, add a little more harissa or chilli; if you want it sweeter, add more icing sugar.
Ingredients:
1 cucumber, thinly sliced
2 carrots, peeled and grated
10 radishes, thinly sliced
A small bunch of fresh spinach leaves, chopped roughly
For the dressing:
1 tsp cinnamon
1/2 tsp icing sugar
1/2 tsp harissa or red chilli, finely chopped
1 tbsp red wine vinegar
1 tbsp extra virgin olive oil
(Serves two)
To make the dressing, mix all the ingredients together. Toss all the salad ingredients and the dressing in a large bowl and serve straight away.
