Chicken adobo

Chicken adobo is regarded as the national dish of the Philippines.

Famous for its spicy, tangy marinade, it’s also very easy and cheap to make.

 

Ingredients:

Serves six

2kg chicken thighs

120ml white vinegar

120ml soy sauce

4 cloves garlic, crushed

1 tsp black peppercorns

3 bay leaves

 

Combine all the ingredients in a large stewing pot; cover and allow to marinate for at least an hour, preferably up to 3 hours.

When ready to cook, take off the lid and bring the mixture to a boil, then lower the heat, cover the pot again and leave to simmer for 30 minutes, stirring occasionally. Remove the lid once more and allow to simmer uncovered for another 20 minutes until the sauce thickens and the chicken is tender. Then serve immediately with rice.
