Mere’s cherry carrot muffins

Ingredients:
1 cup cherries, coarsely chopped (fresh, canned or frozen)
1/2 cup grated carrot
1/2 tsp ginger, grated, minced or powered
1/2 tsp salt
1 tbsp baking powder
2 cups all-purpose flour
1/2 cup sugar
3/4 tsp ground cinnamon or allspice
1/2 tsp almond extract
1 egg
1 cup milk
1/4 cup melted butter
Preheat the oven to 375 degrees. Take 15-18 muffin cups and grease lightly with oil. Place the cups on a tray.
In a large bowl, add the salt, baking powder, sugar, flour and cinnamon and mix together. Add cherries, grated carrot and ginger, and stir gently until well blended.
In a separate bowl, combine the egg, milk, extract and melted butter, and whisk until well blended. Slowly pour the egg and milk mixture into the dry mixture.
Pour the muffin batter into all the cups, making sure that each serving is about two-thirds full. Bake the muffins for 20-25 minutes.
Serve with cherries and/or cream on the side. Enjoy!
