Recipe by Jurgita Vaskel - Polpettes

Try these Mediterranean style little fried morsels of potato and Greek feta cheese, flavoured with dill and lemon juice. Delicious and easy!

Ingredients:
1kg potatoes
200g feta cheese
4 spring onions, chopped
3 tbsp chopped fresh dill
1 egg, beaten
1 tbsp lemon juice
Salt and ground black pepper
Chickpea or plain flour for coating
Olive oil for frying

Boil the potatoes in the skins until soft, then drain and peel, place in a bowl and mash. Crumble the feta cheese into the potatoes and add the spring onions, dill, egg and lemon juice, season with salt and pepper (the cheese is salty so taste before you add any salt). Stir well.
Cover the mixture and allow to cool, then chill until firm. Divide the mixture into small balls and flatten them slightly, then coat them with flour.
Heat the oil in a frying pan and fry the polpettes until golden brown on each side. Drain on a kitchen towel and serve at once with sour cream or crème fraiche. Enjoy!
