Gingerbread cookies are special Christmas season cookies, fragrant with honey, ground ginger, cinnamon and cloves. Have fun making them!
Ingredients:
50g unsalted butter, softened
50g brown sugar
75g honey
1 egg
20g all-purpose flour
1 tsp baking powder
2 tsp ground ginger
1 tsp cinnamon powder
1 tsp ground cloves
Preheat your oven to 180 degrees C.
Cream the butter with sugar, mix in the egg and honey and combine well. Sift all the dry ingredients together and stir into the creamed mixture until a smooth dough forms.
Cover the dough with plastic wrap and refrigerate for 30 minutes, until firm. Then on a lightly floured surface, roll out the dough to just under 5mm thickness. Use cookie cutters of your choice to cut out your cookies, then place them on a parchment-lined baking sheet.
Bake for 10-12 minutes, depending on a size of your cookies. They should be slightly firm to the touch at the edges.
After taking them from the oven, let the cookies cool on the baking sheet for 5 minutes. Decorate if desired with icing or frosting. Store in an airtight container for up to a week.
