Recipe by Jurgita Vaskel - Cocoa cake with lemon curd

Easter is a great time for a family to get together, so start an Easter morning with this tempting cake – an indulgent tea-time treat that kids will love too!

Ingredients:
3 eggs
200g sugar
1 tbsp vanilla sugar (or 1 tsp vanilla extract)
200g full-fat yogurt
200g plain flour
2 tsp baking powder
2 tbsp cocoa powder
12 tsp of lemon custard (homemade or bought)

Preheat the oven to 180 C. Beat the eggs and the sugar until the mixture becomes light and fluffy. Add the yogurt and stir thoroughly.
Mix in the flour, the baking powder and the cocoa powder. Stir until everything is evenly mixed.
Grease a regular cake mould and dust it lightly with flour. Scoop half of the cake batter into the prepared mould. Now spread 6 tsp of the lemon custard over the batter, staying clear of the sides of the cake mould.
Add the rest of the batter and smooth the top, then plop the remaining 6 tsp of custard on top of the cake, staying clear of the sides.
Bake for about 40-45 minutes; the cake is supposed to be moist in the centre.
Dust with cocoa powder and serve it with the leftover lemon custard. Happy Easter!
