Recipe by Jurgita Vaskel - Apple and cheese galette

Everyone loves the smell, look and taste of freshly baked apple pie. But what about sweet apples in a savoury cheese crust? The sweet and savoury combination is really delicious! If you love the deep cheddar taste, you can use sharp-tasting cheese. But for those who prefer something lighter, I’d recommend using mild cheddar.

Ingredients:
1 1/2 cups all-purpose flour
100g cold butter, cubed
1/2 cup grated cheddar
5-6 tbsp cold water
3 medium apples, peeled, cored and
   thinly sliced
6 tbsp sugar
1 tbsp lemon juice
1 tsp cinnamon
2 tsp apricot jam

Preheat the oven to 180 degrees Celsius. Sift the flour into a large bowl, add the cold cubed butter and rub it into the flour with your fingertips until the mixture resembles fine but coarse sand.
Mix in grated cheese, add the water and clench the mixture together lightly. Wrap the dough in plastic and refrigerate until you make the filling.
In a bowl, toss the apples with sugar, lemon juice and cinnamon, then set aside.
On a lightly floured surface, roll the dough to about 40cm wide and transfer it to a parchment-lined baking sheet. Arrange the apples on top of the dough, leaving a 5cm border. Fold the edges of the round over the apples.
Bake the galette for about 40 mins, until the crust is golden. Before serving, brush the apples with warm apricot jam. Enjoy!
