Scaloppine alla Pizzaiola

A traditional favourite from the south of Italy, this dish matches particularly well with crushed or fried potatoes - and a glass of red wine!


Ingredients:
Serves four
8 slices of beef or veal
1 tin chopped tomatoes
1 clove garlic, crushed
Handful of fresh oregano, chopped
Handful of fresh parsley, chopped
2 tbsp olive oil
Salt and pepper to taste


Pour the oil in a large pan and add the crushed garlic. When this is slightly brown pour in the chopped tomato (with some extra puree if needed) and add the herbs, seasoned with salt and pepper.
Let it cook for several minutes, until the sauce thickens, then add the meat, stirring so it’s covered completely with the sauce. Cover the pan with a lid and let the meat cook for about 5/6 minutes on either side till its ready.
