Pasta alla Carbonara is an Italian classic, and it’s very easy to make!
Ingredients:
Serves four
400g spaghetti
5 eggs
100g pancetta (or other smoked
bacon)
1 medium onion
100g parmesan, grated
Salt and pepper
Bring a full pot of water to the boil.
Chop the onion and leave aside.
In a bowl, whisk the eggs with the parmesan cheese and add pepper.
Heat a frying pan with some oil, then add the onion and bacon and fry till the onion has browned and the bacon had crisped.
When the pot of water has come to the boil, add some salt and put in the pasta for 8-12 minutes; be sure to taste to check if its ready before draining and adding it to the pain with the onion and bacon.
Pour in the egg and cheese mixture and stir till the egg is slightly cooked, then serve seasoned with a little extra pepper.
