Puff puff is a popular deep-fried snack in Nigeria – similar to a doughnut, or the French pastry delicacy beignet, or even the Spanish and Mexican churro.
Though it takes some time for the dough to rise before frying, they're very easy to make.
Ingredients:
250g plain flour
2tsp quick-rise yeast
1/2 tsp ground nutmeg
1tsp sugar
3 pinches of salt
1-2 cups lukewarm water
Vegetable oil for frying
Put the flour in a bowl along with the nutmeg, yeast, sugar and salt and mix it all together. Slowly add the water while mixing and stir until the mixture is smooth and thick with a few bubbles. Cover the mixture with a tablecloth and leave it to rise in a warm place for 3-4 hours.
Next, pour the oil into a large pot on a heat, but don't let the oil smoke. Scoop the risen dough with your hand (or with a ice cream scoop) so that it forms small balls, then drop the balls into the oil one by one and fry them a few at a time, being careful not to overcrowd the pot. Fry the balls until they are golden brown, turning them occasionally.
When they are ready, take them out of the pot and leave to cool on a plate lined with greaseproof paper before rolling in powdered sugar or simply enjoying as they are.
