This week I am going to share an Indian sweet recipe made with groundnuts (more commonly known here as peanuts). You might already know it by the name ‘peanut brittle’. It is very quick and easy – kids especially will love it!
- 1 cup groundnuts (peanuts)
- 1 tsp ghee (clarified butter)
- 1 cup powdered (caster) sugar
Method
First the peanuts must be prepared: roast them for 5–10 minutes, and when they are warm enough to touch, rub them with your hands to take off the skins (you can also use skinless ones if you prefer instead).
Put the sugar and ghee in a heavy-bottomed saucepan and heat. When the sugar is melting, make sure no lumps are formed by stirring constantly.
When the caramel sugar mixture comes to a golden brown colour, add the peanuts and mix well to coat the caramel on the nuts.
After a minute, scoop out the mixture into a greased tin and let it cool down. When cooled till its hard, break into small pieces and store in airtight jar.
