Egusi (West African soup)
1kg meat or fish
2 tomatoes
1 onion
4 peppers
Cooking oil
1 cup ground egusi
Boil the meat or fish until tender. Chop the tomatoes, peppers and onions into chunks and stir together with a little water. Place in a pot, add the meat, a little cooking oil and the ground egusi. Cook for 20 to 30 minutes.
Add a little salt and pepper to taste. Serve with pounded yam.
