Last update - Thursday, April 26, 2007, 00:00 By Metro Éireann

This week Ratna's recipe is Egg Puffs. A quick and easy recipe great for lunch boxes and parties. Enjoy it!Ratna Pusarapuratnasree@gmail.com

Egg Puffs

Ingredients- 1 sheet puff pastry
- 3 hard-boiled eggs
- Salt, pepper and chilli powder to taste
- Fresh coriander leaves, finely chopped

Method

Prepare the filling by cutting the egg into thin slices and garnish with salt, pepper, chilli powder (optional) and coriander leaves

Roll the puff pastry slightly. Spread the mixture/filling in the middle of the sheet, over about one-third of the sheet. Wet the ends of the sheet, then fold the left portion of the pastry onto the centre portion, and then the right portion of pastry on top of it. It should look like a log shape now. Cut into pieces approximately 3 inches wide. (You can also cut the pastry into rectangular pieces and stuff them individually, if you have time.)
Preheat the oven, and bake the filled pastry pieces till they turn golden brown. Serve with tomato ketchup or any sauce.

Note: You may defrost frozen puff pastry either by leaving it out for 1-2 hours, or you can leave it in the fridge overnight.
