Schnitzel is a typical hearty German and Austrian main dish.
Ingredients:
2 large chicken breasts (skinless and boneless)
2 cups/120g fresh breadcrumbs 1 cup/120g flour
1 egg
1/2 tsp garlic powder
Vegetable oil
Salt and pepper to taste
Slice the chicken breasts in half and cover with cling-
film, then take a meat mallet and flatten the chicken until thin.
Combine the breadcrumbs, salt and pepper into a large bowl and mix. In a separate bowl, mix the flour and garlic powder together. In a third bowl, lightly whisk the egg until blended.
Put some oil in a pan or large skillet on medium heat. Dredge the chicken in the flour and garlic mix, then dip it into the whisked egg, and finally place into the bread-
crumbs until well covered. Turn the heat up high and fry the chicken for two min-
utes on both sides, or until golden brown. Place the schnitzels onto a plate with paper towels to soak up some of the excess oil, then serve.
Tip: Schnitzel is a usually made with pork. To try an authentic schnitzel, just sub- stitute the chicken with four pork chops – and don’t forget fresh lemon slices to squeeze over!
