This week I want to share a simple item with you – coconut rice. This can be served with any curry, but is delicious to eat as it is.
Ingredients
- 1 cup basmati rice
- 1 tbsp ghee (clarified butter)
- 1 tsp cumin seeds
- 2 bay leaves
- 3-4 cloves
- 15-20 cashew nuts
- 1/2-inch cinnamon stick
- 1 cup coconut milk
- 3/4 cup water
- Salt to taste
Method
Heat the ghee in a saucepan.
Add all the dry ingredients except the rice, and fry them for 2–3 minutes. Then add the coconut milk and water.
Let the mixture boil, then add the basmati rice, washed, and cook till it is soft.
Add salt to taste and serve.
