Chocolate salami

There’s always time for dessert with this quick and easy Italian chocolate salami. Best of all, there‘s no raw meat and no baking involved! Indulge your sweet tooth.

Ingredients:
300g digestive biscuits
50g each of chopped almonds, pistachios, walnuts and desiccated coconut
80g unsalted butter
200g dark chocolate
80g condensed milk
2 egg yolks
1 tbsp Amaretto or rum
50g icing sugar
1 tsp vanilla essence
2-3 tbsp cocoa powder

Crush the biscuits into small pieces. Toast the nuts and mix them with crushed biscuits.
Put the chocolate and butter in a metal bowl, place over a pot of boiling water and allow to melt. Add the condensed milk, egg yolks, Amaretto/rum, icing sugar and vanilla and mix well. Continue cooking over a pot of boiling water for a further five minutes to cook the eggs, stirring regularly.
Add the biscuit mixture and mix well, then let the mixture cool for 10 minutes (as it starts to thicken, it’s easier to work with).
Shape in to a salami shape with a double layer of cling film. Let the salami set in the fridge overnight, then remove the cling film and roll the salami in cocoa powder. Enjoy!
