Cashew Nut Barfi

 This week’s recipe is called cashew nut barfi. Cashews are very tasty and have a good nutritional value – this is one of the interesting ways of cooking them. My kids love this recipe, so I hope you like it too! 

Ingredients

- 1 cup cashews
- 1 cup sugar
- 1/4 cup water
- 1 tsp ghee

Method

Fry the cashews on a low flame till the raw smell goes away – but don’t brown them. When done, grind the cashews into a fine powder with a coffee grinder (or a mortar and pestle).

Put the water and sugar in a saucepan and boil the mixture till sugar melts down fully.

Then add the cashew powder (make sure no lumps are formed) and stir till the mixture thickens. When you see the mixture hardening on the edges of the saucepan, that means it is done.

Grease your hands with ghee and make a ball out of the mixture. Roll the ball with a rolling pin before it sets fully into a half-inch thick circle, and cut into any shapes you like.

When the pieces are fully set, store them in airtight containers.
