This week’s recipe is for carrot curry, a very simple dish to make. It can be stuffed in roti like a wrap, or can be served with rice. Enjoy!.
Ingredients
- 1 cup grated carrot
- 1/2 cup green peas
- 2 tsp oil
- 1 tsp curry powder
- 1 tsp urid dal
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- A few curry leaves
- Salt to taste
Method
Heat the oil in a saucepan. Add the urid dal, and when it is a little brown add the mustard, cumin and curry leaves. When they pop, add the green peas and fry for two minutes
Next add the grated carrot. Let it cook for 10-15 minutes, then stir in the salt and curry powder.
Serve hot with rice, or stuff a roti or wrap for your lunch at work.
