A fast and fun way to make your own noodles! Spätzle is an egg noodle that is often enjoyed in the southern part of Germany.
Although there are many variations, this is a simple and standard dish that tastes great with a simple salad.
Ingredients:
500g all-purpose flour
4 eggs
150-200ml water
Salt to taste
1 1/2 tbsp butter (or non-dairy butter)
Spätzle press or a colander with small holes
For the dressed salad:
300g mâche or any leafy green salad
1tbsp apple vinegar
1/2 tbsp walnut oil
1/2 tsp honey
Salt to taste
Pour the flour into a bowl and add the eggs and a pinch of salt. Start to mix, and slowly add warm water until the consistency is smooth. The dough should not be tough; dip a finger in the mixture and you should be able to coat it. If it has too much liquid, just add more flour.
Bring to the boil a pot of salted water. Then pour the dough into the spätzle press or colander and push it through the holes into the pot, making stringy noodles. The noodles will start to rise after 30-40 seconds. When ready, take the noodles out and drain off any excess water, and then place in a serving bowl.
Add the butter and stir the noodles till coated. Sprinkle a bit of oregano or parmesan on top of the noodles and serve with the salad.
To make the salad, simply toss the leaves, vinegar, oil and honey in a salad bowl with a pinch of salt to taste.
