This week’s recipe is called green rice, made with a type of spinach gravy. It’s very tasty – and a good source of iron, too.
Ingredients
- 1 cup basmati rice, washed
- 1 3/4 cups water
- 1 1/2 cups spinach, finely chopped
- 1/2 cup fresh coriander leaves
- 1 tsp ginger garlic paste
- 1/2 tsp garam masala
- 1/4 tsp amchoor powder
- 1 tsp cumin seeds
- 1/2 inch cinnamon stick
- 2–3 cloves
- 2 bay leaves
- Green chilli paste (optional)
- 2 tsp oil
Method
Heat the oil in a saucepan, then add the cloves, cinnamon, cumin and bay leaves and fry for two minutes.
Next add the ginger garlic paste and fry for one more minute before adding the spinach and coriander leaves.
Cook for 5–10 minutes, then add the washed rice along with water. Next add the garam masala powder, amchoor powder, and salt to taste (you may also add chilli paste if you want to). Then simply cook till rice is done.
Serve hot with any curry or raitha.
Note: If you wish, the gravy preparation can be done in advance.
